Beef Bone-In Rib Roast (Dry Aged)

Sourced from millers of speyside, straight from the highlands, we cycle our rib roasts so they are dry aged for a minimum of 28 days, giving unmatched texture and depth of flavour. This is probably our favourite roast, on the bone, marbled to perfection and so juicy. Beef at its finest. 1 rib – approx 900g feeds 2, 2 rib – approx 1.8kg feeds 4-5, 3 rib – approx 2.7kg feeds around 6-7, 4 rib – approx 3.6kg feeds 8-9.

28 Day Dry-aged Scotch T-bone Steak

Dry aged for a minimum of 28 days, we have these on a constant cycle. Neatly trimmed, expertly cut and a big eat. One sirloin, one fillet, separated by the bone. Our T-Bones are a firm favourite among our customers, and we love them so much we’ve named the company dog after them! Dry aging naturally draws moisture from the meat, intensifying the flavour and permits the beef’s natural enzymes the perfect time and environment to break down connective tissues, ensuring tenderness.

Springwood wagyu beef is reared in aberdeenshire, near ellon. The beef is absolutely sublime – with a tenderness and intramuscular marbling that surpasses traditional beef. Don’t be put off by the marbling – this melts away and leaves behind the most amazing flavour. Hung for a minimum of 28 days. We do require up to a week’s notice to order, but keep an eye on our social media feeds for when we carry stock!
